All our Balsamic Vinegar are from Modena, Italy and prepared using ancient traditional procedures. The process begins with careful selection of the Lambrusco and Trebbiano grapes. These grapes are pressed and the resulting juice called “must” is carefully heated in copper cauldrons until the volume is reduced through evaporation to about 40% of the original weight, all while preserving the vital goodness within. The liquid is then decanted into wooden barrels (chestnut, oak, juniper, and cherry) and left to age and transform into an amazing vinegar.

Flavors:

(Dark) The Godfather – 18 year Aged Balsamic Vinegar. It’s a notable Balsamic with a smooth and rich finish. No added sugars or sweeteners, this is a real Balsamic Vinegar. Well-rounded flavor and with a pronounced presence, the Godfather Balsamic Vinegar is an ultimate “every day” balsamic. This Aged Balsamic is of true artisan quality; a centuries-old recipe. Matured classically until it reaches a perfect balance of aroma and flavor suitable for any dressing, marinade or finish.

(White) The Godmother – This smooth white balsamic vinegar has a subtle sweet taste because it’s from a blend of white grape must and white wine vinegar, that is cooked at high pressure and low temperature which is why it’s so light in color. Mix with any of our olive oils to enhance their unique flavors, or add to citrus juices like lime or lemon to reduce the need for other seasonings like salt.

(Dark) Ripe Fig – Our Ripe Fig Balsamic Vinegar is rich and dense with a tart finish. A fabulous introduction to the world of premium flavored balsamic vinegar. It is quite dense with a beautifully rich essence, yet exhibits the perfect balance of delicate sweetness and tartness. The nutty, semi-sweet flavor of fresh fig enhances and deepens this naturally intense fig balsamic vinegar.

(White) Meyer Lemon – The natural balsamic white vinegar recipe for this well-rounded citrussy lemon dressing is authentically new with an age-old touch. Our Meyer Lemon Balsamic makes an excellent substitute for a lemon or lemon juice. It finishes with just a hint of sweetness and adds a refreshing, summery tonality to appetizers, marinades and salads alike.

(White) White Peach – This authentic white peach balsamic vinegar is made from white Trebbiano grapes, perfectly matured in Italy and then imported to California. Enriched with flavorful brilliant California Peaches, giving it a smooth, pleasantly sweet accent and a wellness sensation for its lasting notes.

(Dark) Fresh Strawberry – Our strawberry balsamic vinegar is ripe and has a sweet aromatic taste of sweet berries. This fresh flavor adds a rich kick to Greek yogurt, grilled chicken, or cheesecake, and will have you picturing picnics in sunny strawberry fields.

(Dark) Pomegranate – Like the sprightly bursts from the red seeds, this Balsamic Vinegar Pomegranate balances a sweet and savory taste with a Splash of the Mediterranean! This balsamic vinegar balances a sweet start with an acidic finish for a fresh and earthy hint of Mediterranean fields.

(Dark) Hickory Smoke – Our Hickory Smoke Balsamic Vinegar is one of our favorites and has long been a family tradition to use it for grilling. Also, our 12-year-aged Balsamic Vinegar has this richness to it, it’s thick and smoky. Marinate your meats and veggies, and you will be amazed at how deep and smoky your meats will taste!

(Dark) Raspberry – Raspberry balsamic, like the strawberry balsamic, but less sweet and a little more tart. Excellent on fruit and veggie salads and makes an excellent glaze on salmon.

(Dark) Dark Chocolate – Our premium and gourmet Dark Chocolate Balsamic Vinegar glaze exudes with a sweet and flavorful rich chocolate taste. A fine specialty chocolate novelty to appreciate, enjoy and indulge in with or without dessert.

(Dark) Savory Garlic – Our Balsamic Garlic Vinegar has cloves of garlic mixed in with EVOO to enhance any of your cooking. A perfect ingredient for your next salad dressing. Pair it with our Diablo Jalapeño for a vinaigrette with a kick. Or try drizzled overstuffed portabello mushrooms.

(White) White Raspberry – Sweet, Tart, and slightly Tangy! This White Balsamic from Italy is infused with Raspberries for an incredibly great taste. Versatile with a delicate touch, this Raspberry White Balsamic can make any dish dance with a drop or a dash.
